There are a variety of pickles like chicken, mutton, koramenu (fish), and panduguppa (fish), etc. even if we choose a variety per day, it serves an entire week, like 7-week jewelry. In the olden days, non-veg pickles are only limited to rich families. Even very few people knew how to prepare non–veg pickles. They even don’t share the recipe with anybody, but with change, in times all the people know the techniques of preparing non-veg pickles. Non-veg pickles have become famous across the states and districts, even countries. It became a multi-crore industry - directly or indirectly hundreds of families depend upon this industry. People who live across the country and foreign countries when they come to villages for festivals or functions, they bring a minimum of 5 varieties of pickles to their homes for their near and dear ones.
There are a number of varieties of pickles available like broiler chicken, natu kodi, pandhem kodi, kouju mutton, kheema, dry prawns, prawns with gongura, koramenu, crab, panduguppa. The entire process of preparing veg pickles is different from making non-veg pickles, for veg pickles we use mustard powder as their preservatives but in non-veg pickles, no mustard is used as their taste depend upon the species. In the process of preparation, we use hand to blend the veg-pickles, but in non-veg pickles, it is not allowed to blend with hand even a small mistake will defeat the taste of the entire pickle. All varieties of non-veg pickles are made in the same process and with the same quantity and ratio of spices. It’s very easy to prepare non-veg pickles if all spices are ready. Their taste improves by using coriander seeds.
